Stuffed Zucchini

Sausage stuffed Zucchini. Yummy!
Ingredients
- 3 cups bread (cubed)
- 1 Medium onion (diced)
- 2 roma or plum tomatoes (diced)
- 1 teaspoon granulated garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- crushed red pepper (to taste)
- kosher salt (to taste)
- 1/2 cup chicken broth
- 1 cup shredded cheese (Use whatever cheese you like.)
- 2lb zucchini (sliced lengthwise and scooped out)

Step 1

preheat oven to 375ºF/190ºC/Gas Mark 5 |
Step 2

Cut bread into 1/2 inch dice, spread on baking sheet, toast in oven until golden. |
Step 3

Using a paring knife, cut around the edges of the halved zucchini and then cross-cut inside that without cutting all the way through. Then using a spoon (a grapefruit spoon works wonderfully) dig out the centers of the zucchini. Set aside. |
Step 4

Cut open the casing on the sausage (if cased) and place in saute pan to brown. |
Step 5

Cut medium onion into 1/2 inch dice and add to sausage in pan. Stir and cook until onions are sweated and starting to get translucent. |
Step 6

Cut two Roma tomatoes into 1/2 inch dice and add to sausage and onion. |
Step 7

Add herbs and garlic and stir. |
Step 8

Add the toasted bread cubes and the chicken broth. Cook a few minutes longer and remove from heat. |
Step 9
|
Put the zucchini halves in a baking pan |
Step 10
|
Divide the stuffing among the zucchini halves |
Step 11
|
Bake for 20 minutes. Remove from oven. Add cheese and bake for 10 minutes more. |
