Stuffed Peppers

On a day as cold as today is, warm, filling, comfort food is in order for supper. Today we are having [tag]Stuffed Peppers[/tag]. Red bell peppers are full of vitamin C and tomatoes are full of licopene which is a healthy antioxidant.

Time for some [tag]food porn[/tag].

Recipe:
preheat oven to 350°F

2-3 red bell peppers
1 pound lean ground beef
1 cup finely diced onion
1 egg
2 teaspoons Italian seasoning (I use Urban Accents Roma seasoning)
1/4 cup tricolor couscous (uncooked)
1 can tomato sauce
1 can diced tomatoes
crumbled feta cheese.

Halve and core peppers and lay in pan. I sprayed some olive oil in the pan first.

Mix together ground beef, onions, egg, spices and couscous.

Divide and stuff each pepper half. Don’t be afraid to stuff them really full.

Mix the diced tomatoes and tomato sauce together.

Spoon or pour the sauce over the stuffed peppers.

Sprinkle crumbled feta cheese over the top.

Cover the pan with foil and bake at 350°F for 35 minutes.

After 35 minutes, remove foil and put the pan back in the oven for 20 more minutes.
